1.5 pounds small red potatoes, boiled until soft
2/3 cup sour cream
1/2 shredded sharp cheddar cheese
2 tablespoon butter
1/4 cup Oscar Meyer Real Bacon Pieces
3 green onions, sliced
Salt and pepper to taste

Mash the potatoes with a spoon (I like them chunky) then add the sour cream, cheese, and butter. Mix well then add the green onions and bacon piece and lightly mix again. Add salt and pepper. Granted, this isn’t an original recipe, but I used what I had on hand. As a cook, it’s empowering to be spontaneous and not rush to the store for specific ingredients.
