Lemon Cheesecake Bars
Crust:

In a 13x9 pan, evenly press down a mixture of:
1.5 cups graham cracker crumbs
1/3 chopped pecans, in very small pieces
1/3 cup granulated sugar
1/3 cup melted butter or margarine

Save 1/3 cup for a topping. Bake in a pre-heated 325-degree oven for 6 minutes, place on a wire rack to cool.

Cheesecake:

2- 8 oz packages of 1/3 less fat cream cheese
1-14 oz can fat free sweetened condensed milk
1/2 cup Egg Beaters egg substitute
1/2 cup lemon juice from concentrate

In a large bowl, beat the cream cheese until fluffy. Gradually beat in the condensed milk. Add the Egg Beaters and beat just until combined. Stir in the lemon juice. Carefully pour the mixture over the crust. Sprinkle with the remaining crumb mixture and additional pecans if desired. Bake at 325 degrees for 30-35 minutes…check doneness with a toothpick in the center coming out clean. Cool on a wire rack for an hour then refrigerate. Cut into squares as desired.
