Katie's Quick Queso
You need a blender, one 32 oz slab of Velveeta cheese and one can of Rotel tomatoes.

Cut the cheese into cubes and toss half into the blender along with half the can of tomatoes.

Blend, I used the liquefy setting, and a spoon to help it along if needed. Once it’s smooth, throw in rest of the tomatoes and cheese and blend again until its smooth, no lumps of cheese.

This queso doesn’t require heating and it’s still dippable (my new word) after refrigerating. Serve with your favorite chips or crackers. It’s great for outdoor venues or taking to the office for a pot-luck lunch.
