Ellen's Decadent Flourless Chocolate Cake

Ingredients and order of preparation:

Turn on the oven to 300 degrees —Butter the bottom and sides of a springform or cake pan, then dust with cocoa

Melt one 10 ounce bag of semi-sweet chocolate chunks in the microwave per instructions on the bag

Stir into the melted chocolate:

• 4 large eggs
• 1 teaspoon vanilla extract
• 1 heaping tablespoon of cocoa
• 1 cup shredded coconut
• ½ cup chopped walnuts
• ½ cup softened butter
• ¾ cup white sugar

Stir well then pour the mixture into the prepared pan

Bake in preheated oven for 35-38 minutes, check doneness with a toothpick in the middle, cool in the pan for at least ten minutes then turn out and cool on a wire rack…dust with confectioner’s sugar.

Once cooled, garnish the cake with your favorite topping such as fresh whipping cream, vanilla ice cream, raspberry preserves, sliced strawberries or a chocolate glaze sprinkled with almonds.
